Warm Salad Series: Chicory and Fennel Salad with Balsamic Glaze


This is the fourth warm salad in this series. The first week of the series I posted a recipe for a Grilled Nectarine and Goats Cheese Salad, the second saw my honeyed figs with mozzarella and cured ham salad.
Three weeks after this series started, I’m posting a salad where all of the ingredients are griddled together, including the leaves – the warmest of all of the salads yet.

The salad leaves used in this recipe are chicory. This can be bought in most good supermarkets. Its leaves are firm and crisp which means it stands up to the heat of a griddle-pan really well!

For the best results, this salad should be griddled on a high heat, so that the ingredients begin to blacken adding extra flavour!

Currently Craving: Fish!

Currently Craving: Fish!

I mentioned in one of my posts a few weeks ago that I am now coming into the home stretch, with the final exams of my university career in just under two months time. It’s a very scary thought, but also a very exciting one! I definitely feel ready to leave uni behind and move on to the next challenge but unfortunately for me it’s not going quite how I planned just yet. I will be moving back home with my parents while I go to Law School in London. The fees are huge so it would be stupid to turn down free food and rent while struggling under a mountain of debt! So, all I can do now is try and do my best in these exams and as a result I started my first lot of revision today!

Just last week, I posted a fish recipe and discussed how oily fish in particular is great for your brain. Now I love fish at the best of times, but ever since doing that post I have absolutely been craving fish! Last night I was lucky enough to have fresh mackerel on toast for supper, and tonight I’ll be having salmon so I thought with fish at the top of my menu at the minute I would do a round-up for you of all of the fishy-posts from the first year of my little blogs life!

Two Ways with Trout



I love, love, love when things I can’t normally afford to buy are on offer in the supermarket! I don’t know why people don’t make more of reduced sections!!!

At the beginning of the academic year, as I did my first big supermarket shop I stumbled across a pack of two trout fillets for just £1. That’s right £1, saving me around £3.50!!! So with their best before date coming to an end I wacked them straight in the freezer!

Now, as the reading is piling up, and tutorials are kicking in, I’ve been in desperate need for brain food and I got my trout out to defrost...now all I needed were two delicious trout recipes to cook up a storm!
