Tuna Salad

I apologise for the lack of main meal recipes and abundance of salads at the minute. The only time of the day I really get to think about food is at lunch when I take a break from revision! Dinner is often something out of a jar, so I'm trying to eat as healthily and as sensibly as possible for at least one meal of the day!


Here's today's addition! I didn't have much salad veg left so raided the cupboard to find tinned tuna and sweetcorn...now what could I do with that...





Tuna Salad

Ingredients:

½ a tin of tuna (line caught if you can!)
½ a bag of salad (as cheap as you like – Asda’s cheapest is 44p!)

A spring onion

3 tsp of tinned sweetcorn
A tomato

½ an avocado
 

Dressing:

1 tbsp of low fat mayonnaise
Juice of ½ a lemon

Black pepper

Method:

Toss all of the salad ingredients together in bowl.

If you have a salad shaker mix the mayo, lemon and pepper together (you can also include a pinch of cayenne pepper if you want a bit of a kick!)

 Pricing – as always based on Asda’s basics at the time of writing unless otherwise stated!

Salad 22p, Tuna 19.5p, Spring onion 10p, Sweetcorn 10p, Avocado 32p, Tomato 15p

Total = £1.08


This salad is really yummy! It’s perfect for exams as it’s quick and easy to make, healthy, and includes fish – brain food!

The creamy dressing isn’t entirely necessary, and would be healthier without but it definitely adds something! The combination of smooth avocado, earthy tuna, sweet tomatoes and corn with the edge of lemon and pepper from the dressing combined in a creamy sauce is DELICIOUS!
