Japanese Chicken Noodle Soup


Exams are slowly but surely taking their toll, this coupled with obscene amounts of birthday cake and birthday meals and takeaways meant that this evening I needed a pick me up! Something tasty, vibrant and healthy that would get me feeling revitalised and ready to jump back on to the revision train! Choo choo - all carriages terminate at the exam hall.

Whenever you have a cold or are just generally run down, most peoples go to recipe is a chicken soup. So today I decided to have a go at a Japanese inspired version with udon noodles and lots of ginger and spring onion.

It was exactly what the doctor ordered!




This dish is at the top end of my price range, mainly due to the chicken (boo expensive meat), but it's well worth it.

In total it will cost you: £2.25 for one person.

Pricing (based on Asda's own unless otherwise stated):
Chicken £1, Clearspring Udon Noodles (see Waitrose) 57p, Spring onion 30p, Baby sweetcorn 15p, Mushrooms 10p, Oxo Stock 8p, Ginger 2p, Soy sauce 3p

On the plus side this is a very lean dish keeping calories and fat content very low! A good dish to help you kick off winter colds and winter blubber!

  1. This looks yummy! I'm beginning to cook a little asian style food but it's intimidating when you haven't before. This looks pretty easy, but tasty too so I think I'll be giving it a go!

  2. I think the thing I found hardest when beginning to cook asian food was the sheer variety of ingredients that you may need...whether its sesame oil, ground nut oil, light or dark soy etc it can be hard just just 'whip up' something authentic!

    It's good to experiment though :) I came out of my comfort zone with won tons and spring rolls! You should check them out too!
