Simple Bread and Butter Pudding

One of my all time favourite desserts is bread and butter pudding!

I don't have any sentimental, nostalgic stories about my Nan or Mum cooking it on a Sunday, or anything quite as special...instead, I had my first taste of bread and butter at a very posh wedding! It was one of the nicest things I'd ever had! My mum found it so funny when I came home, telling her about this 'super-posh-must-be-hard-to-make-dessert' that she taught me there and then!

It's brilliant when you have left-over stale (possibly even mouldy) bread...(don't forget to pick the mould off!) AND I think it's a brilliant way of getting one of your five a day as a student!

It's cheap as chips, and this is my quick and easy students version.

(I apologise for the low quality of the photo I did not have my camera to hand!)

Bread and Butter Pudding

(This makes 2 medium size portions!)

Ingredients:

4 or 5 slices of bread
2 eggs
3 spoons of sugar
Dash of milk
Fruit of your choice (today I used left-over raspberries, works just as well with dried fruit - in the winter I use dried apricots and raisins!)

If you don't want to use fruit this is just as yummy with chocolate!!!

Method:

First find yourself an oven dish. Butter your bread and cut it into whatever shape helps you fill the dish most easily. I went for triangles!

Layer your bread and your fruit in the bowl.

Mix up your egg and milk and pour over the bread and fruit. Give it a good squishing down so all of the bread is covered and going gooey. Add more fruit on top and sprinkle over a couple of spoonfulls of sugar to get a nice caramelly crisp top!

Bake for roughly 25-30mins on a low heat (gas mark 4 or 5ish)

Although this recipe serves too, the BEST thing to do with bread and butter pudding is to let it cool, save it for tomorrow, and zap it in the microwave!

Not only does it taste better the more stale your bread is, but it tastes EVEN better the longer it's been in the fridge!

Pricing (based on Asda's own brand unless specified!)

Bread 10p, Happy Eggs 52p, Sugar 3p, Butter 5p, Fruit roughly 50p

Total: £1.20

For 1 portion: 60p

The great thing about this recipe is that you can actually halve it so that it is perfect for one! And you can choose cheaper fruit!

  2. I ALWAYS make bread and butter pudding when I need a quick dessert for my friends, and it's surprising how many people don't know how to make it. Thanks for this recipe, I shall point it out to my friends next time :)

  3. Glad you like it!!! To make it that little bit extra indulgent you can add cream instead of milk, and making it with brioche is supper yummy too!

Unfortunately I never have brioche or cream in my cupboards at uni :(

Ps. I added chocolate on top of my leftovers tonight...raspberry and chocolate is SUCH a good combination :D
