Barbequed Courgette and Bulgur Wheat Salad

It can be really difficult to watch your weight when heading to a BBQ with friends and family. There will be a mountain of meat, some sumptuous fish, and if you’re lucky the odd veggie kebab on the BBQ too. The table of sides often isn’t much better with mayonnaise laden potato salads, coleslaw swimming in yet more mayonnaise and sugary condiments.

My Mum and I are often the bringers of “green salad” to these kind of events but the limp lettuce tends to get pushed around the plate. One leaf might make its way into a burger bun if its lucky.
With that in mind I’ve started making a conscious effort to serve up more exciting salads when cooking up a storm around a BBQ.

Before I thought if people weren’t willing to eat a simple green salad, why would they be willing to try a cous-cous or bulgur wheat one? I won’t lie to you, I have had mixed success in this regard. My Nan and Grandad simply won’t touch the stuff, but it turns out the rest of my family are much more willing to try new things.
With that in mind here’s one of my favourites. It’s a warm salad with the courgette grilled and served over the fluffy bed of bulgur wheat at the last minute. This gives it a bit of theatre and people feel like they’re not betraying the BBQ!

Baked Pasta Florentine


These last few weeks really have been all about clearing out the cupboards and fridge – partly in preparation for all of the yummy Christmas food that we’re slowly starting to build up. Over the last two weeks I’ve posted two risotto recipes, one for Chicken and Tomato Risotto and another for Sausage and Asparagus Risotto both of which went down really well! But with Christmas shopping, Law Exams (Im officially two exams closer to being a solicitor!) and keeping down a part time job, it's been really hard to stick to any sort of meal plan and our fridge is looking a little sad and lost.

 Yet again this week we had a number of ingredients sat at the back of the cupboard that desperately needed eating up in particular spinach and eggs. I’ve always thought that spinach and eggs were a GREAT combination! Whether you’re making eggs Benedict, a spinach omelette, or even on a pizza... Who else loves the Fiorentina pizza in Pizza Express? And it seems that the people of Florentine agree so this dish is inspired by them. It may not be traditional, but it’s my twist on their way of cooking.
With all of these dishes in mind I decided to come up with a pasta dish that would be rich and filling, without going straight to your hips. Portion control is key with this dish; with the cracked egg oozing on top you don’t need to pile your plate high with the pasta underneath, and a little cream goes a long way. We are not looking to have a thick sumptuous sauce, but instead a flavoursome coating which brings all the ingredients together. If you are extra careful and make substitutions like 1 cal spray instead of olive oil, and use a low-fat cream this doesn’t have to spell the end of a diet.

Chicken and Tomato Risotto


I overheard my parents talking the other day...they were wondering what they’re going to do when I leave home for good. Food-wise that is! I’m sure they’d love to have their house back; it would be clean, tidy and quiet. But they can’t deny one thing – they eat much better when I’m around!
We’ve nicknamed Mum’s cooking cordon bleu because it couldn’t be further from the truth! She’s well aware that she only has a few recipes in her repertoire that don’t involve packets of frozen food but having said that what she can cook isn’t half bad. When she's not cooking fish fingers it's probably a Chicken Supreme or a Bolognase!

Dad’s a much better cook and he’s probably where I get my cooking skills from. Every now and then he’ll decide to cook a Chinese feast from scratch, or whip up a curry. He’s also not half bad at puddings! It’s just a shame he’s not in the kitchen more often when I’m not around.
I don’t think my Mum is half as bad as we make her out to be. I think a lot of being a good cook is about having the confidence to try new things and the imagination to create something different when faced with the same old ingredients in the cupboard. A couple of weeks ago I cooked a sausage and asparagus risotto for the first time. It was completely unplanned and was based on what I could find in the fridge, but it worked so well we’ve tried it a few times and it now has pride of place on my blog. This recipe isn’t too dissimilar. Not only is it a risotto recipe, but it uses up all of those ingredients you usually have lurking at the back of the fridge; chicken breasts, tomatoes, stock, tomato puree and rice. Nothing here – bar the basil if you don’t grow your own – is special or fancy, they are every day flavours that when combined together make something really quite special!

Courgette and Feta Bake


Since Easter I have lost nearly a whole stone and have now reached a rather healthy plateau bang smack in the middle of my recommended BMI range, WOOHOO! Unfortunately for me, both high blood pressure and high cholesterol run down the female line in my family. Despite only being at the top of the healthy BMI range for her height, my Mum was recently told she needs to keep her weight down to reduce her chances of suffering a stroke like her Mum did. Understandably, now that I’ve reached this weight I want to stay here so that I don't suffer the same fate as other women in my family. As a result, I have come up with even more delicious but low-calorie recipes.

Mum and Dad are also on diets and this has become one of their firm favourites! It’s incredibly simple with just 5 ingredients (including the 1 cal spray!)
If you haven’t come across one cal sprays yet, where have you been? You can get all sorts, from olive oil and sunflower oil to even balsamic and ceaser salad dressings. By turning the oil (or dressing) into spray form you can much more easily control the amount of oil you use. If you don’t want to keep buying the sprays another alternative is to get an oil pump spray – unfortunately mine is currently in a box labelled “Emma’s House”...I don’t have any plans for moving for over a year yet but that’s another story! Anyway, I digress...


I wasn’t entirely sure what to call this recipe it to begin with – essentially it is finely sliced courgette, crumbled low-fat feta (I actually use "Be Good To Yourself Salad Cheese from Sainsburys), egg, Italian herbs and the one cal spray all baked in an oven. Spanish omelettes and frittatas traditionally contain potatoes, but the only veg inside this eggy-bake is courgette. But it’s not cooked in a pan either so it can’t be an omelette? If anyone has any insight into what this should really be called, do leave a comment!
For now I will simply call it a courgette and feta bake! I think the name of a dish should explain what it is and hopefully that does the trick.

Turkey and Sweet Potato Pie

Calling everyone on a diet everywhere! Unless you are doing a crazy diet that cuts out a whole food group, this is one healthy recipe you can’t afford to leave out of your repertoire!

This recipe is low in fat – thanks to the lean turkey mince! Is jam-packed full of vegetables, making sure you get your five-a-day. And most of all it is full of flavour! It really is proof you never have to go bored or hungry on a diet ever again.

The turkey mince I have used is the best of British and can be bought fresh from all good supermarkets, and I’ve also used a slightly more unusual ingredient, Peppadew peppers! Very tasty, sweet little preserved peppers which give you a bit more of a kick than normal fresh red peppers would.

Also sweet peppers are coming into season so if you can get your hands on some they'd also go really well in this.

Low-fat Apple Tea Cake



At the minute I have two culinary conundrums... Firstly, my apple tree is HEAVING! We can't catch them quick enough as they fall off the tree, secondly I have eaten far too indulgently over the last two months of being at home and am in desperate need of a few more healthy treats in my recipe file!


This recipe was my saviour! A tasty treat, but with a lot less fat than your average cake recipe!
