Barbequed Courgette and Bulgur Wheat Salad

It can be really difficult to watch your weight when heading to a BBQ with friends and family. There will be a mountain of meat, some sumptuous fish, and if you’re lucky the odd veggie kebab on the BBQ too. The table of sides often isn’t much better with mayonnaise laden potato salads, coleslaw swimming in yet more mayonnaise and sugary condiments.

My Mum and I are often the bringers of “green salad” to these kind of events but the limp lettuce tends to get pushed around the plate. One leaf might make its way into a burger bun if its lucky.
With that in mind I’ve started making a conscious effort to serve up more exciting salads when cooking up a storm around a BBQ.

Before I thought if people weren’t willing to eat a simple green salad, why would they be willing to try a cous-cous or bulgur wheat one? I won’t lie to you, I have had mixed success in this regard. My Nan and Grandad simply won’t touch the stuff, but it turns out the rest of my family are much more willing to try new things.
With that in mind here’s one of my favourites. It’s a warm salad with the courgette grilled and served over the fluffy bed of bulgur wheat at the last minute. This gives it a bit of theatre and people feel like they’re not betraying the BBQ!

Bubble and Squeak


The 27th of December - for me, the first day I finally get to sit down and rest. (Well as much rest as can be achieved while revising for Law School.)

The Christmas period is certainly a busy one. Tonight we are entertaining my sisters new boyfriend who is visiting from Nottingham - aka Christmas 2. Tomorrow I will be at Jon's house for Christmas 3 as his sister and brother-in-law come to stay. On Saturday there's another family party to attend before yet MORE family coming to stay on the 30th! And despite all of this, we still seem to have WAY too much food in our fridge! You'd think we didn't feed our guests.

Taking a little respite today, my mother and I decided to try and make a dent on the leftovers in fridge.

We came across cooked parsnips, peas, sweetcorn, roast potatoes and loads of carrots. This means one thing in our house - bubble and squeak.

For those of you who don't know, bubble and squeak is a traditional English a shallow fried potato cake filled with other vegetables leftover from a roast dinner.

For those of you who believe in the saying "waste not, want not" this recipe is for you!

Mozzarella Stuffed Chicken with Mediterranean Tomato Sauce

I don’t know about you but I am ready for summer!!! With exams just around the corner, come the 24th of May I will be free and starting a 15 week long summer holiday before attending Law School.

One of my favourite things as the weather starts to change and warm up is how eating habits change too: long sunny evenings lead to Alfresco dining, and salads fill you up like never before! I also love cooking recipes inspired from holiday’s abroad. Nothing says summer like Spanish Tapas, or a delicious Italian inspired pasta dish. This recipe is one of those!

Economy/basics ranges are your friends!
Even as someone who LOVES food, and always tries to seek out the bets quality ingredients...in some instances, there is no reason why you shouldn't opt for economy! They really don’t taste any worse! It’s not the price it’s what you do with it that matters!!!
